Pumpkin Roll

Makes two rolls.

Mix together:

2 cups sugar
1 ½ cup flour
1 tsp cinnamon
2 tsp baking soda
6 eggs
1 can (15oz) of pumpkin

Pour in a well-greased cookie sheet, spread evenly.

Bake at 350º for 15 minutes. Let cool while making the filling.

Mix together:

2 packages of 8oz cream cheese – softened
2 cups powdered sugar
2 teaspoons vanilla extract
4 tablespoons butter

Sprinkle some powdered sugar on your work surface, flip cake on top.

Spread filling evenly, roll up and refrigerate until chilled. Slice and serve.
