Standing Rib Roast

Preheat oven to 500°
Season with salt and pepper in pan:

1 Rib Roast (almost 8lbs)

Create a rack by placing roast bone-side down.
Place in oven for 10 minutes
Turn oven down to 350° and continue roasting for about 2 hours.
(For medium rare cook at 135°)
Transfer roast to cutting board and cover with tented foil for about 15 minutes.
Slice & Enjoy!
