Zucchini Bread

Mix together and beat to foaming:

3 eggs
1 teaspoon salt

Add to mixture:

1 cup oil
1¾ cup sugar
2 teaspoons vanilla extract
2 cups grated zucchini
1¾ cup crushed pineapple
1 cup walnuts or raisins 

Mix together in a separate bowl:

3 cups flour
2 teaspoons baking soda
½ teaspoon baking powder
1 ½ teaspoon cinnamon
¾ teaspoon nutmeg

Mix the wet ingredients into the dry ingredient bowl, slowly incorporating.

Pour into greased and floured bread loaves. Makes two loaves.

Bake at 325º for 1 hour.
